Optimization and Characterization Freeze Dried Fish Protein Hydrolysate Production

The production of fish protein hydrolysate from underutilized species is attracting the industrial interest for increasing rich values. central composite design was used to optimize degree enzymatic hydrolysis freeze-dried (FPH) by application commercial Alcalase on recovery mixed small protein. effects time, temperature, pH and enzyme concentration (DH) five strains as Rastrelliger brachysoma (short-bodied mackerel), kanagurta (Indian Leiognathidae (Ponyfish), Amblygaster leiogaster (Smooth belly sardinella) Selaroides leptolepis (yellow-stripe scad) were experimented. Result showed that FSH optimized at 2.85%v/w 61 °C, 8.50 27 min with 89.42% DH. Mathematical model proposed validated under optimum condition. high proportion (46.43%) smaller molecular weight <1 kDa found in hydrolysate. Freeze-dried produced revealed three predominant amino acids glutamine, lysine alanine. Based acid compositions, waste nutritional value potential applications feed supplementation.
